Polpette Di Melanzane, a delicious alternative to meatballs!

Eggplants have quite a meaty texture and make a delicious vegetarian alternative to meatballs. This recipe came about in Italy when meat was scarce or could not be eaten during religious events, like Lent.

Normally these dumplings are served with salsa al pomodoro. When you break through them with your fork and smother them with the salsa they are so tasty that you will not be able to stop eating them.  Trust me you can’t, so make sure to make enough for you and your guests. They will love you for it!

Recipe (serves 4)

  • Olive oil or vegetable for frying
  • 2 eggplants, cut into small cubes
  • 3 tbsp grated parmeson
  • 1 egg
  • salt and pepper
  • 6 basil leaves,roughly chopped
  • 60g stale bread, softened in milk
  • dried breadcrumbs, for coating

Tips After frying your eggplant cubes, allow them to cool over kitchen paper. In a bowl combine the eggplant, parmesan, egg, salt, pepper, basil and bread. Roll mixture into small balls and coat them with breadcrumbs. Fry the balls until golden brown. Follow this by making a simple salsa al pomodoro. Now enjoy and don’t worry about how many dumplings you eat as they are a healthier option!
